Bully Beef & Rice

This dish is a family favorite and has fed many a hungry black kid. With tins of corned beef being popular to many peoples of the Pacific, Bully Beef and Rice has been adopted by Indigenous people from all over Australia. Another dish reminiscent of the days of when fresh meat was inaccessible to Aboriginal and Torres Strait Islander people.

Ingredients:

  • 1 x tin of corned beef
  • 3 x potatoes diced
  • 2 x carrots diced
  • 1 x large onion diced
  • 2 x garlic cloves diced
  • 2 x cups of cabbage diced
  • cooking oil for frying
  • salt and pepper to taste

  1. Prepare all ingredients. Place oil in heated frying pan and saute onions for 5mins on high-med heat. Once half sauteed, stir in garlic.

2. Place contents of corned beef into frying pan and fry off until all the meat, onions and garlic are well blended.

IMG_76783. Add in your diced potatoes and carrots and add enough water so the vegetables are almost covered.

IMG_76814. Cook for 10-15mins or until the potatoes are soft.

IMG_76835. While everything is cooking you can now season your dish with salt, pepper and soy sauce.

IMG_76856. Once your potatoes are nice and soft then add your diced cabbage.

IMG_76876. Cook for another 5mins or until cabbage becomes soft and all the flavors have blended nicely.
